Spontaneous Cooking with Local Asparagus



Stir-fry Asparagus macaroni

Decided to spontaneously cook something with the locally grown asparagus that I picked up at the farmers market. It was very light and tasty, but probably nothing I could get my husband to eat.happily. Here is the general estimated recipe, when all was said and done.

Serving size 1

Ingredients:
-1 Tb extra-virgin olive oil
-1 tsp minced garlic
-1/4 cup of cooked chicken
-1tsp cumin
-5 Tbs lemon juice (estimated amount)
-1/8 cup water (estimated amount)
-2 Tbs chopped onion
-1/4 cup mushrooms
-1/4 cup asparagus
-2 pinches of rosemary
-1 tsp garlic powder
-1/4 cup cooked macaroni

Directions:
1. Drizzle oil into wok, turn heat up to a medium and add garlic.
2. Once garlic is browned add the chicken, cumin and a couple Tbs of lemon juice, cook fully and set aside
3. Add water and the remaining lemon juice to wok. Add Onion and saute for a minute until soft
4. Add mushrooms, asparagus, rosemary and garlic powder. Stirring occasionally until asparagus is tender.
5. Add cooked macaroni , sauting until combined and warm.
6. Stir in chicken and serve hot
